ChatGPT extension lost the icon and now shows test “ChatGPT App” instead of ChatGPT icon.

Some of the extension icons are downloaded from Iconify when the extension is first loaded. This may occur if PopClip is unable to access the internet (specifically api.iconify.design
) upon launching. Perhaps the internet was inactive or access was denied via a firewall.

I don’t recall any internet issues, I have internet right now and it still displays text instead of icon.
Is there a way to force the app to update the icons?

You could try quitting PopClip and clearing out the contents of ~/Library/Caches/com.pilotmoon.popclip/IconCache
.
The next time you load it, PopClip will attempt to download any remote icons needed by your currently installed extensions.
I don’t know, but perhaps PopClip is unable to write to the folder. It could be some kind of macOS glitch. Reinstalling PopClip and rebooting your system would be a good starting point.

Did you originally install the update manually or through the in-app update? Knowing this might help me troubleshoot for the future.
I didn’t update manually, must have been an auto-update through app
